Pick your dates and rough route, send an enquiry to a couple of operators, and ask for a written, day-by-day itinerary with a clear price breakdown. Confirm what is included, pay a deposit (usually 20–30%) by card or bank transfer, and keep everything in writing. Avoid cash-only deals.
The honest version is simpler than most websites make it sound. You start with two decisions: roughly when you want to come, and roughly what you want to see — desert, imperial cities, mountains, coast, or a mix. You do not need a finished plan. A good operator builds the plan with you; that is half of what you are paying for.
From there I would enquire with two or three operators rather than just one, so you have something to compare. Tell them your dates, group size, budget range, and the handful of things you really care about. What you want back is a written, day-by-day itinerary with driving times, where you sleep each night, and a line-by-line price breakdown — not a vague "from $X per person" figure. If a company will not put the itinerary in writing before you pay, that is your answer.
When you are happy, you confirm by paying a deposit (20–30% is normal in Morocco) and the balance is usually due closer to travel or on arrival. Pay by card or traceable bank transfer where you can. Be wary of anyone who insists on a large cash-only payment up front or pushes you to "lock it in today" — pressure is a red flag, not a courtesy.
