A good operator treats your enquiry as the start of a conversation, asks about your pace and interests, and is happy to say "that itinerary is too rushed, here is a better version." Generic, instant, pushy responses tell you what the trip will feel like.

On the practical checklist: they should be a registered, licensed operator (not just a freelancer with a van), give you a written itinerary with real driving times and named overnight stops, and break down what is and is not included. Ask who actually runs the tour on the ground — many overseas "operators" simply resell a local Moroccan company, which is fine, but you want to know who you are really dealing with and whether your guides are licensed.
