For most people, the best option is a 3-day / 2-night private tour to Merzouga and the Erg Chebbi dunes. It includes Ait Ben Haddou, the Todra or Dades gorges, a sunset camel trek and a desert camp night. Private with a knowledgeable driver-guide beats a crowded group bus.
The best Sahara tour from Marrakech for the majority of travellers is the 3-day / 2-night route to Merzouga. It's the format that strikes the right balance: it reaches the big Erg Chebbi dunes (~150m, the classic Sahara), spreads the long drive across two travel days, and still leaves you a proper afternoon, evening, and morning in the desert. Anything shorter sacrifices too much dune time; anything much longer is only needed if you want a very leisurely pace.
A strong itinerary on this route includes the right stops, not just the destination. The drive should take in the UNESCO kasbah of Ait Ben Haddou, the cinematic Todra or Dades gorges, and ideally an oasis or palm grove or two, so the journey is scenic rather than a slog. At the dunes you want a sunset camel trek into camp, dinner under the stars, Berber music, and a sunrise the next morning before heading back.
The single biggest quality factor is private versus shared. A private tour with your own vehicle and an experienced English-speaking driver-guide lets you stop where you like, travel at your own pace, and learn about what you're seeing — and it's dramatically more comfortable than a packed minibus on a fixed schedule.
