Anything close to full payment up front, or a cash-only demand, is unusual and worth questioning. Always pay by a traceable method and get the deposit and terms confirmed in writing.

For a private, tailor-made Morocco tour, a deposit of roughly 20–30% is the normal range to hold your dates and let the operator book riads and camps on your behalf. The remaining balance is typically paid before departure or on arrival in Morocco. That split is reasonable for everyone: it commits you, and it covers the operator for the bookings they make for you in advance.

There are sensible exceptions. During peak weeks — Easter, the autumn high season, Christmas and New Year — or for trips built around hard-to-get camps and special accommodation, a slightly higher deposit can be fair, because the operator is paying suppliers earlier. The key is that any larger-than-usual deposit should come with an explanation and be reflected in the written terms.
