Step through the carved cedar doors of a beautifully restored riad in the heart of Marrakech's medina and enter a world where cooking is an act of love, storytelling, and cultural preservation. This immersive three-hour tagine workshop is led by a seasoned Marrakchi chef whose family recipes stretch back five generations. You begin with an aromatic journey through the fundamentals of Moroccan spice craft -- learning to toast, grind, and blend the ras el hanout, cumin, saffron, and preserved lemons that form the soul of every tagine. Under expert guidance, you prepare two complete tagine variations: a classic lamb, prune, and almond tagine with caramelised onions, and a vibrant vegetable tagine showcasing seasonal produce from the local souk. While the tagines simmer gently over traditional charcoal kanoun braziers, you learn the ancient art of khobz bread baking in a wood-fired oven, and prepare a refreshing Moroccan carrot and orange salad with hand-ground cinnamon. The workshop unfolds on a sun-dappled courtyard terrace where the scent of orange blossoms mingles with rising spice steam. You finish by sitting down to feast on everything you have prepared, accompanied by freshly brewed mint tea and honey-drizzled pastries.
