The Chouara Tannery in Fes is the oldest and largest traditional leather tannery in the world, an extraordinary medieval industrial site where the process of transforming raw animal hides into supple, vibrantly coloured leather has remained virtually unchanged since the 11th century. This three-hour craft-focused tour takes you deep into the heart of the tanning quarter with a guide whose family has worked in the leather trade for five generations, offering an insider's perspective that transcends the superficial viewing-terrace experience available to most visitors. You begin with an overview of the tanning process from a panoramic terrace, where hundreds of stone honeycomb vats filled with dyes derived from saffron, poppy, indigo, henna, mint, and pomegranate create a mosaic of vivid colour that is one of the most photographed sights in Morocco. Your guide explains each stage: the soaking in limestone to remove hair, the treatment with pigeon droppings to soften the hide (a technique dating back over a thousand years), the repeated washing, the hand-dyeing in natural pigments, and the sun-drying on the medina rooftops. You then descend to the workshop level, where master craftsmen cut, stitch, and emboss the finished leather into bags, belts, poufs, jackets, and slippers using tools and techniques passed down through generations. You visit three distinct workshops: a babouche slipper maker who produces 200 pairs a day by hand; a master bag-maker whose creations are exported to European fashion houses; and an embossing specialist who can create intricate geometric patterns freehand. The tour continues to the metalworkers' quarter, where coppersmiths hammer enormous trays with mathematical patterns, and the woodcarving souk, where artisans create screens and furniture from thuya wood that perfumes the air.
