Arriving into Casablanca, you are perfectly placed for a grand loop: south to Marrakech and over the Atlas to the desert, then back up through Fes and Meknes, or the reverse. The desert at the heart of it is Erg Chebbi near Merzouga — Morocco's tallest dune field at around 150 metres, with the widest choice of luxury camps and roughly Bortle Class 1 to 2 dark skies for stargazing. The point of starting in Casablanca is the breadth of the loop: you can fold in Rabat, Fes and the Roman ruins of Volubilis around the desert centrepiece.
